INGREDIENTS

Enchilada Sauce:

1/2 C each chopped onion and green pepper

2 T butter

1 15- oz can tomato sauce (can sub red enchilada sauce)

1 C chicken stock

2 tsp chili powder (can sub red enchilada sauce)

1 tsp each cumin* sugar and salt (can sub red enchilada sauce)

1/8 tsp pepper (can sub red enchilada sauce)

Chicken Filling:

1/3 C half and half

8 oz pkg cream cheese

2 in C cooked chicken cut into strips

3/4 C chopped onion (optional)

1/2 tsp salt (optional: I use taco seasoning instead)

Enchiladas:

12 soft corn tortillas

Butter

1 1/2 C shredded Cheddar cheese 6 oz
